Pone
can be made from cornmeal, sweet potatoes, yams, or
gari, but my favorite recipe uses sweet potato. It can
be eaten hot or cold, but I love it cold because the
flavor of the ginger seems to become stronger. Pone
can be served as a dessert with McArthur cream, as an
accompaniment to roast pork or poultry, or eaten hot
or cold as a snack on its own.

sweet potatoes or yams, grated
8 OUNCES
pumpkin, grated
3 TEASPOONS
ginger root, grated
2 OUNCES
butter, melted
4 OUNCES
coconut, dehydrated or freshly grated
1 CUP
McArthur milk
8 OUNCES
cane or caster sugar
VANILLA ESSENCE
(to taste)
GRATED NUTMEG
(to taste)
2 OUNCES
each of sultanas and raisins (optional)
Preheat
oven to 350 degrees.
In
a large mixing bowl, combine all ingredients and mix
well. Grease 2 pie dishes and pour in the mixture. Smooth
the tops.
Bake
in an oven at 350 degrees for 1 hour.
Serve
hot or cold.
